The Baltics restaurant scene continues to evolve through passion and drama

The 2019 Top 30 Baltic restaurants were announced by White Guide Nordic on November 12 in Tallinn, Estonia. The list features eight new entries, five of which opened this year and three of which made it all the way to the Top 8. In all, across Estonia, Latvia, and Lithuania, the Masterclass Level increased from 10 to 16 restaurants. On the flipside, three of last year’s Top 30 are no longer in business.

    Karl Erik Pallesen runs the kitchen at this fishmonger by day, hotspot by night – a place that is widely known for having the best fish soup in the kingdom. As seasoned readers probably know, this is a typical claim written on every blackboard along the touristy pier and around Lågen, from the run-down local dive bar to the more posh establishments fancied by oil executives. The creamy soup with shrimp and ling fish feels like a feast. Here the vegetables are crunchy, and the emerald green oil tastes just as brilliant as it looks. The rumours are true: this is the best fish soup. A ramson risotto follows, and comes out on top. The risotto has a vibrant green colour from the wild and garlicky Nordic leaves. The shrimps and mussels are moist and have the right bite to them. The sweetness of the seafood is matched by pickled carrots. The baked Atlantic cod comes with a butter sauce with salmon roe, cauliflower, cucumber and red oxalis. The menu is written on a big blackboard, and the waiters tour the small dining room with it, at times with such struggle that we’re surprised they don’t feel compelled to put it down on a piece of paper. A group of men who are celebrating something cause the service to come to a halt, though it was attentive at first. In the end it is nearly impossible to get the staff’s attention as they hastily fly by us en route to the men with heavy trays of beers. Fisketorget Lågen is a good place to let your mind wander while enjoying the great seafood this region is known for.

With Enrique Olvera as its 2017 laureate, the Global Gastronomy Awards were presented at his Mexico City restaurant Pujol on September 23rd, 2018. For ten consecutive years the awards ceremony was hosted in Stockholm, last year, however, it became a movable feast and relay race, traveling to the home turf of the previous year’s winner. The first global stop was New York where 2016 awardee Dan Barber handed over the baton to Enrique Olvera. Chef Olvera in turn passed it on to David Thompson, making Bangkok the next destination.

WHITE GUIDE BALTIC: Today at an event in Tallinn, Estonia, the names of the White Guide 160 Best Baltic Restaurants were announced

Compared to last year, the number of recommended restaurants has increased in all three countries, from 60 to 160. Estonia, being the smallest of the three Baltic countries, has the largest representation in the guide.

‘When it comes to gastronomy, the Baltic region is going through a very dynamic phase right now,” says Aivar Hanson, publisher of the guide in the Baltics. This development started a bit earlier in Estonia but Latvia and Lithuania are now catching up fast. Restaurants all over the region are now transforming from simply offering food to offering really exciting culinary experiences. In Latvia and Lithuania, these places are emerging as we speak”.

Both of last year’s two best restaurants in the Baltic region evolved further during the year and ended up switching places in the ranking. NOA Chef’s Hall in Tallinn, Estonia takes the top spot this year, while Vincents in Riga, Latvia comes in second. Third place is shared between two newcomers: Nüman in Kaunas, Lithuania, and Alexander Chef’s Table, the Tallinn winter restaurant of the esteemed restaurant Alexander located at Pädaste Manor on Muhu island.

“We have followed the development in the Baltic countries closely for four years now. It’s evolving fast and we keep track of all the developments – and will report them on the website. There is no better time than now to visit Baltic restaurants,’ concludes Hanson.
